Mise & Margin was founded by restaurant operators who’ve lived the realities of this business—the excitement of opening, the pressure of margins, and the lessons that come with growth and change.
We’ve opened and operated 30+ restaurants across the U.S. and Asia over two decades. Those experiences shaped a practical belief: great restaurants need both culinary vision and business discipline to succeed.
Our perspective is rooted in New York City, one of the world’s most competitive restaurant markets. NYC teaches you quickly that execution matters, guests are discerning, and margins leave no room for guesswork. That mindset informs how we support clients everywhere: strategic, grounded, and results-focused.

A Career Bridging Technology and Hospitality
With a career spanning both technology and hospitality, Rick has built, led, and scaled businesses across industries. He has launched multiple startups, managed large regions for billion-dollar organizations, and consistently delivered growth through strategic leadership and operational excellence.
Leadership, Innovation, and Industry Impact
In technology, Rick rose through the ranks from Vice President to COO, overseeing teams of up to 1,000 employees and nearly $100M in revenue—earning national recognition as the #1 VP of Sales & Operations. In hospitality, his 20+ years of experience span concept development, branding, investment, and multi-unit management. Every restaurant he has owned has earned a New York Times review—twelve stars in total—and two have been awarded the Michelin Bib Gourmand.
Educator, Advisor, and Fractional COO
Formerly the Dean of Restaurant & Hospitality Management at the Institute of Culinary Education (named Best Culinary School in America), Rick now serves as its Executive Director of Industry Relations. Today, he works full-time as a food and beverage consultant and fractional COO, advising clients across the East Coast and serving on several corporate boards, including a group pursuing its second public offering on NASDAQ.

Felipe brings more than a decade of corporate finance and administrative leadership into the fast-paced, ever-changing world of food and beverage. After 14 years managing complex operations, financial planning, and compliance for one of Chile’s largest industrial Construction companies, he transitioned his skillset to hospitality after moving to NYC, where he graduated from the Restaurant Management Program at the Institute of Culinary Education.
He specializes in cost analysis, budgeting, and financial forecasting, helping restaurants clearly understand their current position and build achievable paths toward their goals.

Isha brings a rare blend of financial expertise and people-first leadership to the hospitality industry. A qualified Chartered Accountant, she began her career in India at KPMG, advising on complex M&A tax transactions. After moving to New York, she transitioned into restaurant operations at Unapologetic Foods, where she discovered her passion at the intersection of food, service, and human connection.
She has led initiatives to reduce costs, increase revenue, and streamline front- and back-of-house systems. With a foundation in financial strategy and operational execution, Isha aligns the numbers with what matters most: people, experience, and consistency.
Isha is endlessly curious about what makes restaurants thrive, from financial fundamentals to the human touchpoints that define memorable service.

Cole’s path to hospitality started the way every good meal does: in a kitchen. Working as a prep cook during his summers home from college in Montana, he developed an appreciation for the energy of restaurants – the movement, the connection, the craft. Moving to New York City after college, Cole built a professional foundation in marketing and brand development through his work in environmental graphic design and honed his operational skills for years on film sets.
When strikes shut down the entirety of US film in 2023, he found his way back into the restaurant industry as a bartender, renewing his passion for food, beverage, and the art of hospitality. Cole brings a creative, people-first approach to restaurant storytelling and strategy, focusing on helping operators communicate with warmth, clarity, and intention.

Giovanna’s passion and love for restaurants is literally in her DNA. As the 5th generation & Head of Marketing at the iconic 115 year old, Californian Italian restaurant, Luigi’s, Giovanna has been inspired to continue the hospitality work of her family throughout her career.
From business school, to on-set sports television production, to brand building & social media at the Gen-Z wine brand “Whiny Baby”, Giovanna has an array of experiences that has shaped her expertise. She now hopes to bring elements from her background and passion for hospitality to help restaurants tell their story and shape their social media presence in a unique way.
